Homemade crepes filled with ricotta cheese, garlic & sauteed mushrooms are topped with shredded Swiss and parmesan cheese. They are then baked and broiled. Yum!

Sauteed mushrooms and tofu with parmesan and ricotta cheese. Topped with Swiss and wrapped in homemade pie crust. This is way better than the words ‘pot pie’ can convey.

This is a favorite at our house. Here’s my recipe:
3 largeish sweet potatoes
1 medium onion
1-3 cloves of garlic
A box of veggie broth (or 2 cans)
1-2 cups cream or whole milk
Salt and pepper to taste
Cilantro or spearmint leaves to garnish (optional)
Dice the onions. Crush the garlic. Brown in a pan with the butter. Peel and chunk up the sweet potatoes in 3/4″-1″ pieces. Core, peel, and chunk up the pears. Once the onions are clear, add the sweet potatoes and pears. Mix and simmer for a couple of minutes.
Add the contents of the pan to a pot and cover with veggie broth. Bring to boil for 20 minutes or until the sweet potatoes are soft. Allow to cool a bit and process in the food processor or blender until smooth. Add the milk or cream. Reheat soup but don’t allow to boil. Serve with a dollop of sour cream and chopped cilantro or spearmint.
